Ojio Raw Organic Yacon Powder is made from a potato-like root that has been farmed in the lush mountain valleys of Peru for centuries. Often called the “Apple of the Earth”, these roots are sliced thin and sun-dried before being stone ground into a powder. Yacon has a wonderful sweet taste and a naturally high Inulin content, with only about half the calories of the average sugar source. Yacon’s complex sugars break down slowly so they have little effect on blood glucose levels, making it low on the Glycemic Index.

Yacon plants grow year round in frost free areas and take approximately six to seven months to reach maturity. After flowering, the plant produces rhizomes that in turn are attached to large tubers that can weigh upward of two pounds. The tubers look similar to sweet potatoes and are sweet in taste.
When the yacon roots are ready to harvest they are washed and disinfected with high temp water which removes all soil and dirt particles. After washing, the yacon roots peeled completely as the skin can negatively affect the final products flavor.
The peeled yacon roots are juiced and then filtered to remove all solid matter. The juice is then put into an evaporator that removes all the water in the juice turning it into thick syrup.

The climates range from arid in coastal regions, to tropical in the Amazon Rainforest and are home to over 21,000 species of plants and animals.
