Baby greens with golden berries and toasted chia

Makes 2-4 servings

Dressing:

  • 3 T olive oil
  • 3-4 T lemon juice (1 lemon)
  • 1 T white wine vinegar
  • 1 T honey
  • 1 tsp dijon mustard
  • Himalayan salt (to taste)
  • black pepper (to taste)

Salad:

  1.  Mix all dressing ingredients together, salt and pepper to taste.
  2.  Toast chia seeds in small pan over the stove, mixing (or shaking) constantly to avoid burning. The chia seeds will turn a shade darker and smell toasty when ready. Remove and transfer to a small dish.
  3. Toss salad ingredients together with dressing.
  4. Enjoy! 

Notes: a little (goat) cheese wouldn't hurt...
